Rattler Grilled Shrimp with Tomatillo, Roasted Corn and Feta Salsa
INGREDIENTS
Rattler Marinade
- 30 u-13/15shrimp
- 2 tB.lime juice
- 2 tsp.adobo
- 1 cup½ Rattler BBQ sauce for marinade (+½ cup for basting)
- 2 tsp.ancho powder
- ¼ bunchescilantro
- 4 garlic cloves
- 1 ½ cupblended oil
- Three Pepper Purees
- 2 red peppers
- 2 yellow peppers
- 2 jalapeno peppers
- olive oil
Tomatillo, Roasted Corn & Feta
Salsa
- 2 ears of corn, roasted
- 10 tomatillo, small dice
- 1 red onion, small dice
- 1 bunchescilantro, chopped
- 2 tB. cupEVOO
- 2 tB. cuplime juice
- ¼ cupcrumbled feta cheese
- 1 tsp.ancho chile
- 1/2 tsp.cumin
PROCEDURE
- 1.For the Rattler Marinade: Blend the lime juice, adobo, Rattler, cilantro and garlic. Slowly add the oil. Pour over the shrimp and chill for one day.
- 2.For the Pepper Puree: Char all of the peppers. Remove the skins and seeds. Puree all of the peppers separately with oil and salt. Season to taste. Reserve each puree in a separate squirt bottle.
- 3.To Finish: Place two pieces of marinated shrimp on each skewer. Baste with the extra Rattler BBQ sauce while grilling. Serve the shrimp over a bed of the Tomatillo, Roasted Corn and Feta salsa. Garnish with the three pepper purees.
